Pumpkin Seeds

It's not too late to make tasty pumpkin seeds from your jack o' lanterns!

Every year I try a new recipe for pumpkin seeds because I can't find the recipe from the year before.  This year I found a recipe on Pinterest that looked easy enough.  Here is my finished product!

Toasted Pumpkin Seeds Recipe

Ingredients

  • One medium sized pumpkin
  • Salt
  • Olive oil

Method

1 Preheat oven to 400°F. Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Separate the seeds from the stringy core. Rinse the seeds.
2 In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. Add a half tablespoon of salt for every cup of water (more if you like your seeds saltier). Bring to a boil. Let simmer for 10 minutes. Remove from heat and drain.
3 Spread about a tablespoon of olive oil over the bottom of a roasting pan. Spread the seeds out over the roasting pan, all in one layer. Bake on the top rack until the seeds begin to brown, 10-20 minutes. When browned to your satisfaction, remove from the oven and let the pan cool on a rack. Let the seeds cool all the way down before eating. Either crack to remove the inner seed (a lot of work and in my opinion, unnecessary) or eat whole.

The fun part, at least for the kids, is gutting the pumpkins.  I am girly girl and hate being sticky or slimey and to me the inside of a pumpkin is both. 


When all the guts are removed I put everything into a strainer in the sink and with water running I go through the seeds until all those yucky, orange stringy things are gone.  It really doesn't take very long.  Maybe 5 minutes.

I have never boiled my seeds before I had always just coated them and put them straight into the oven.  I must say I like boiling.  It didn't take that much longer and the salty flavor was more infused then just on the out side.

Never seen boiling pumpkin seeds before?  This is what they look like.


When they have boiled for 10 minutes take them out and strain them again and then pour onto a cookie sheet that has been lightly coated with olive oil.  The recipe says to bake for 10-20 minutes but mine baked for about 30 minutes.  I did it in 10 minute increments and stirred between each. 

MMMMM! They came out nice and crunchy and not at all chewy.


Hopefully I can keep track of this recipe for next year!

TShirt Refashion - Craft Day!

I love my family!

All of the women in my family like to get together occasionally to sew or craft together.  This particular weekend we all met at my Grandma's house  and made an entire weekend out of it. My Mom and 2 sisters were all quilting and I was just sewing lots of little projects.

One of the projects I did was this TShirt Refashion. 


I followed the tutorial at from Tea Rose Home.  It is a fabulous tutorial with lots of pictures and great instructions.  Here is hers.  I love how it looks with a cardigan!


You use 2 shirts to make the 1 and I got my shirts at the DI.


$2 each Ooh Ooh!


 I really like this shirt!  This isn't the best picture (I am actually wearing my pj bottoms when I posed) but it is really a fun shirt!


To share a little more of my weekend, this is my Grandma's house where we spent the weekend.  My Mom grew up in this house and  I have lots of fun memories of trips to this house growing up.

We spent lots of time laughing, eating and on the look out for HUGE scary spiders.  It was a great time.

Pizza Casserole Recipe

Have you seen the Pizza Casserole recipe floating all over Pinterest?  It looks absolutely amazing! 


I knew I would have to try it out. But sadly most of the pins go to dead links, so that sent me on a mission to find the recipe to share with you!


And it tastes even better then it looks!  I have a feeling this is going to become one of my kids' favorites.


So as you can see I found the great secret Pizza Casserole Recipe, so here it is!

  • 1 bag of egg noodles, cooked and drained
  • 1 large can or jar of pizza sauce
  • 3 cups shredded mozzarella cheese (or more if you like a lot of cheese)
  • 2 lbs. ground chuck, cooked and drained
  • 2 packages of pepperoni (or less if you like less)
  • Optional: Black olives, onions (chopped), ricotta cheese
Cook and drain the ground chuck in a large skillet. Cook and drain the egg noodles in a medium pot. Preheat the oven to 350 degrees. In a large 9×13 oblong baking dish, start by spreading a thin layer of the pizza sauce on the bottom of the baking dish.

Continue by layering in this order: Half of the noodles, half of the ground chuck, half of the pizza sauce, the remaining half of the noodles, the remaining half of the ground chuck, the remaining half of the pizza sauce, the remaining half of the cheese, and top off with the pepperoni. If you are using any optional items, incorporate them into the laying.

Cover with foil and bake for 20 minutes. After this time is up, remove the foil cover and bake for another 15 minutes. Allow the pizza casserole to sit for about 10 minutes before serving.

Accordion Rosette Gift Topper

Recently a good friend of mine lent me a book and I wanted to return it to her with a little thank you gift (the book was really good!)  So I decided to make a yummy loaf of banana bread.  But I couldn't give her the plain boaring loaf of bread withut making it look cute!  So I went to Pinterest to find some motivation.  And this is what I made!


Debbie at debbie d's stamp studio created a wonderful tutorial with lots of pictures and easy to follow steps.

So here is my boaring looking (but oh so yummy) loaf of banana bread.


And now it is all fancied up with this beutiful Accordion Rosette!


It makes it look even more yummy (if that is possible)!

Vampire Pumpkins

Aren't this little guys just so cute Scary!


These cute little vampire pumpkins have been flaoting all over the internet and Pinterest and I knew that I just had to make some of my own.  I wanted to take mine to work so that meant that I couldn't use real pumpkins.  I found these 2 cute little styrofoam pumpkins at good ol' Walmart for $.98 and a huge pack of teeth for $1.49. 




I printed off the mouth template from marthastewart.com and cut out the mouth on the pumpkins.  The tricky part was knowing how deep to go, so I kept trying the teeth in until I thought they fit right.



I originally tried coloring the inside of the mouth with a permanent marker because I didn't have any black paint (yeah, I know, who doesn't have black paint laying around)  But I couldn't get into all of the nooks and crannies so I broke down and went back to the store and bought some black acrylic paint.  (I forgot to take a picture after I painted them - oops)

After the mouths were painted and dried, I put the teeth in and then used used large red and black brads and just pushed them straight in.

Monogram Candy Jar

At work we do what we call a secret friend.  You have this friend for 3 months and each month you are supposed to do something for them but they are not supposed to know who their secret friend is.  (That is unless, of course, they read my blog :)

I decided to make fun little candy car for my friend.  And the best part is already had everything I needed except the candy to fill it.  I used a small mason jar, a glass candle stick, just the flat part of the lid to the canning jar, a wooden knob and my favorite E-6000 glue.


I cut out a fancy letter C out of vinyl on my Craft Robo.  Then used transfer tape so I could apply it without messing up the cut-out.


Once I had that positioed on the jar where I liked it I removed the transfer tape and just the vinyl remained.  Then I took my glass etch and let it sit for about 20 minutes.


While I was waiting for the etching I started working on the lid.  I glued the wood knob to the center of the flat lid and waited for it to dry.


After it had dried for a little while I went to spray paint it.  But the spray paint would not stick to the wooden knob so instead I got out some acrylic paint and painted it with a trusty old paint brush.  (That step not shown)


When the glass etching was done I washed it off and removed the vinyl.  Look how pretty!


The I glued the jar to the glass candle stick again using the E-6000 (amazing stuff).  This one took almost a full day to dry.


When it was completely dry I added a little pink ribbon and the lid.


Since I couldn't give her an empty candy jar I filled it with her favorite chocolate treat.


I really loved how it turned out.  I think she likes it too because it has been almost a month and it still sitting on her desk at work! (and I have seen it filled with at least 3 different candies)
